3 Ingredient no churn Strawberry Ice Cream

 

I love making ice cream from scratch. Love to see the science and the art combining the eggs, sugar, dairy and flavorings and churning them to perfection for a heavenly treat!

There is always a vanilla, chocolate and cardamom ice cream in the freezer. Strawberry ice cream is made when fresh strawberries are in abundance at the markets. And if I want to make the ice cream later, I wash and clean the strawberries. Then blend in a food processor, freeze them in ice tray and then once frozen I place them in a zip pouch and keep in freezer till use.

There are somedays when my ice cream stock is running down and I don’t have much time on my hand. I love to make no churn ice cream with few ingredients where I have to just mix them all together and freeze. After a few hours awaits a delicious treat in the freezer

This recipe needs no special equipment and with minimal effort gives a creamy dreamy strawberry treat!!

 

The rose water is an optional ingredient but it gives the strawberry ice cream a very rosy taste. I not sure you can all together skip adding rose water or if you want to experience this unusual flavor add few drops of rose water on your scoop !

Serves: 16 scoops                      

Ingredients

  • 400 gm condensed milk tin
  • 600 ml thickened cream ,chilled
  • 2 punnets fresh strawberries , chilled or 500 gms frozen thawed and water strained
  • 2 tbsp. rose water (optional)

Method

  • Keeping aside 3-5 strawberries, wash the chilled strawberries, hull and process in a food processor, like a chunky mash.
  • In a stand mixer or a hand held electronic whisk, add chilled thickened cream and condensed milk to the bowl and whisk until soft peaks form.
  • Pour the strawberry puree into the cream and condensed milk mixture and fold gently. Pour the rose water and give a gentle stir.
  • Pour the mixture into a freezer safe container. I like using cake tin lined with a cling film or parchment paper or you can pour as it is. Now, top the mixture with slice strawberries which we kept aside.
  • Cover and freeze for 5-6 hours or overnight.
  • Enjoy with some sliced strawberries on top!!

 

PS-

  • You may add some white/dark chocolate chips and reduce the quantity of condensed milk as per your taste.
  • You can use other varieties of berries also.
