Coffee is a versatile ingredient used in desserts, beverages, baking and not so regularly in savory dishes. The roasted beans add a depth and smokiness to a dish.
Recently,I received a gift hamper from Jamaica Blue Cafe for launching their Seasonal Costa Rica Single Origin Coffee. One shot of this magic potion and I knew what I would love to create using this coffee which has chocolate and citrus notes: a chicken dish!
Coffee and chicken are essential ingredients in my recipe repertoire. I love creating different dishes. Chicken is a protein with which flavor pairing is pretty easy and simple.
We love chicken wings and this coffee marinade do justice to the succulent and juicy chicken wings, enhancing their flavor.
The chicken wings taste great when marinated for at least 5-8 hours, grill, and bake or cook them on a grill pan and enjoy with cooling yoghurt and mint dip. They are spicy, sweet and flavorsome!

Ingredients
- Chicken wings or drumettes : 1 kg
Marinade:
Dry Ingredients
- Jamaica Blue Ground Coffee Beans - 1/4 cup (or any other brand)
- Cloves – 3
- Black pepper corns – 1 tbsp.
- Dried ginger ground – 1/4 tsp.
- Paprika - 2 tbsp. (Hot version)
- Coriander seeds ground – 2 tbsp
- Brown sugar – 3 tbsp.
- Salt – 1 tsp or as per your taste
Wet Ingredients
- Garlic cloves – 3-4 minced
- Tomato paste – 2 tbsp.
- Tamari or Soy Sauce – 2 tbsp.
- Rice wine vinegar – 1/2 tbsp.
- Oil – 2 tbsp
Garnish
- Fresh Coriander Leaves – Chopped
- Fresh Green chilies – Chopped
Mint and Coriander dip
- Plain or Greek yogurt – 1/2 cup
- Mint Leaves – 1/3 cup , lightly packed
- Coriander leaves – 1/4 cup,
- Salt and pepper – as per taste
Instructions
Marinade
- In a grinder, grind all the ingredients under dry marinade into a fine powder.
- Add all the wet ingredients and mix them together. It will be a thick paste.
- Take the chicken wings and coat them evenly with the marinade.
- Cover and refrigerate for 5-8 hours.
Mint and Coriander Dip
While the chicken is marinating, you can make the dip and keep refrigerated.
- In a blender, blend mint, coriander, salt and pepper. Add to the yoghurt and, mix thoroughly and keep in fridge.
Cooking
- Preheat the oven at 200 Celsius and bake the wings for about 40 minutes.
- At around 20 minutes, pull them out and flip them with tongs. This will help the wings cook even without burning the marinade.
- Take them out, garnish with fresh coriander and chilies.
- Serve with a dip of your choice; here I have made a quick dip of mint coriander and yoghurt.
