This recipe is a Paneer specialty. It is delicious and looks straight out of a restaurant kitchen, cooked with minimal effort. This is one of my favorite dishes to cook for family and friends, love to see the satisfied smile on their faces!!
Paneer do pyaaza is a simple curry made with Paneer, tomatoes and onions. Do pyaaza literally means two onions, meaning two types of onions are added. Traditionally, the chopped onions and fried onions are used. I am not a fan of frying in everyday cooking, so instead of adding fried onions, for the texture, I add thickly sliced onions at the second time.
In this flavorful dish, there is a texture of sautéed onions in a smooth sauce along with soft paneer cubes. This dish is not spicy and has slight sweetness from onions: good for kids as well as folks who cannot tolerate heat. You can eliminate chili if you want. Or if you want a hot dish add fresh green chilies or more chili powder.
I like serve this dish with paratha and it goes well with any Indian bread and even steamed basmati rice and dahl.
This is a good dish for weekend specials as well as for gatherings or potluck.
Recipe
Ingredients
- Paneer / Cottage Cheese – 300 gms , cut in cubes
- Onions , 3 large
- Ginger garlic mince, 1 tbsp.
- Ripe tomatoes , 2 large , pureed
- Garam Masala 1 tbsp.
- Cardamom green, ground a pinch
- Turmeric , ½ tsp
- Red chili powder, ½ tsp ( or more as per taste)
- Fresh cream, 2 tbsp.
- Ghee – 1 tbsp.
- Fresh coriander leaves to garnish, chopped
- Salt, to taste
- Water, ¼ cup
Method
- Fine chop 2 onions and puree the tomatoes.
- Cut the paneer into cubes.
- In a pan, heat ghee, add the chopped onions and fry till translucent. Add ginger garlic mince and fry for 30 seconds.
- Add the pureed tomatoes; add the garam masala and cardamom, red chili powder and turmeric. Cook the mixture on a medium heat for 5-7 minutes. Add the thickly sliced onions and sauté till they are soft not mushy. Take 2-3 minutes on a medium high heat. Add a little water if the sauce is very thick.
- Pour the cream and salt and stir, add paneer cubes and mix well
- Garnish with fresh coriander and slurry of cream (optional) and serve.
