Its winters in Australia and it’s colder than ever. For me winters are all about togetherness, hot food, being cozy and lots of green vegetables. I love chili in my food especially in winters as it keep the body warm.
My favorite dish this winter is Thai chicken patties with lemon grass skewers.
The minced chicken, mixed with fierce chili and coriander paste add a depth of flavours.Also, the minced chicken wrapped around the fresh lemongrass skewer gives the chicken patty a beautiful look as well as lingering aroma of lemongrass.
I am giving a pictorial the recipe, as its is easier to follow the steps with a visual.
The recipe looks complicated as there are a lot of ingredients, but it is an easy recipe. You can make the patties in a griddle as well as on a barbeque. I am using the griddle method and for the charred effect on the skewers I will broil them for a minute in the grill.
So let's get started with the Chicken patties with Lemon grass skewers and a dip.
Serves- 8 skewers
Chicken Skewers:
- Chicken Mince- 500 gms
- Lemongrass stalks - 4
Spice Mix:
- Lemongrass stalk-1/2 (white part)
- Fresh red chili -1
- Fresh Coriander leaves- a small handful ( you can use whole coriander stem also for deeper flavour)
- Ginger- 25 grams, cut into 4 pieces
- Garlic - 3-4 cloves
- A small onion - 1 peeled
- Salt - to taste
- Oil - 2 tbsp
Dipping Sauce:
- Mango Pulp - 1/2 cup ( raw mango) ( if now raw mangoes available, use mango puree)
- Chilli Paste - 2 chillies
- Turmeric - 1/4 th Tsp
- Mint leaves- 1 tsp, fine chop
- Salt- to taste
- Sugar - 1/4 tsp (omit sugar if using mango puree)
- Sesame oil - 1/4th Tsp
Salad:
- Cucumber - 1, washed
- Carrot - 1 , washed and peeled
- White vinegar - 2 tbsp
- Sugar - 1 tsp
- Salt - 1/2 tsp
- Water - 1/2 cup
Cut and peel all the ingredients under the spice mix heading.
Make a paste of the spices in a mortar and pestle. You can do in a mixer or a blender also. I somehow, believe that mortar and pestle makes a paste more flavorful.
Steps:
1. Put the chicken mince in a bowl, add spice paste and salt. Mix thoroughly.
2. Prepare 4lemongrass stems by removing one or two of the outer layers till you reach the white section and cut them in half.
3. Lightly oil your hands and taking a portion of the mixture and a lemon grass stem at a time, shape the mixture around one end of the stem , set aside and prepare rest of the stems. Refrigerate till cooking.
4. To cook the skewers, heat a frying pan or a grill pan and cook the skewers for approx.2-4 mins each side , till they are light brown and thoroughly cooked. You can grill them on direct flame for a charred effect.
5. For the dipping sauce, mix the ingredients thoroughly and microwave for 30 seconds and stir it again and keep aside.
6. For the salad, boil water , vinegar, sugar and salt, cut cucumber and carrots in ribbon shape and boil for 30 seconds, cool the mixture.
7. Keep the kebabs on a plate, with dipping sauce and salad.
